Uncle Tommy's World-Famous Teriyaki Glazed Chicken

Howdy Kids, 

This is a little different from the stuff we normally put on the site, but hey, that’s my name up there in the logo, and I like this recipe… so I figured I’d share it with y’all.

Ingredient Amount

Chicken drumsticks
(I use drumsticks,but this works with all kinds of chicken. Adjust your baking time if you use something else.)

2 lb

Soy sauce (low sodium)
or Tamari sauce

1 1/2 Cups

Mirin Vinegar

2 tbsp

Honey

1 Cup

Sesame Oil

2 tsp

Garlic (Minced)

1 tbsp

Ginger (Grated)

1/2 tbsp

Crushed Pepper
(Optional)

1 tsp

Directions (The EASY Part)

  1. This couldn’t be easier…
    Combine all the ingredients except chicken in a big mixing bowl.

    Whisk it up real good.
    Make sure to set ½ cup of sauce aside (BEFORE it touches the raw chicken).

  2. Place chicken in a large resealable plastic bag.
    Pour the marinade over the chicken, and seal the bag and adjust to ensure the legs are evenly coated.
    Marinate in the refrigerator for at least 1 hour. Can also marinate overnight for more flavor.

  3. Preheat the oven to 375 degrees Fahrenheit.

  4. Arrange chicken drumsticks on a parchment paper lined baking sheet.

    Pour the bag of marinade over the chicken before you toss it in the oven.

  5. Bake uncovered for 45 to 50 minutes or until cooked through.

    Add the remaining 1/2 cup of sauce in the last 5 minutes of baking or right after you remove the dish from the oven.

BOOM. You’re done. 

Enjoy with rice (or cauliflower rice, which I love) or your favorite veggies.
